The Elefante varietal is unique to the farms of Gloria Rodriguez. A natural cross between an Ethiopian landrace varietal and bourbon, the fruit is much larger than a typical coffee cherry, whilst the bean remains a similar size - hence the name Elefante. With the best of both its parents, these plants produce a cup profile which is floral and crisp, but with an underlying depth of sweetness.
