The Finca Veracruz farm is located on the Santa Barbara Estate. This region is ideal for coffee growing because of diverse microclimates, singular volcanic soils, perfect altitude and a tradition of excellence in coffee.
The ‘extended fermentation’ process means that each day after de-pulping, the picking is added to the fermentation tank with the previous day’s pickings. This raises the pH (makes it more alkaline) which makes for a lovely big fruitier taste profile.
