Juicy blueberry hits first, with a coating strawberry cream through the middle. This is a fruit full cup, with lots of creamy milk chocolate body coming through.
The Sharo washing station is another project from Israel Degfa, who if you’ve followed us for a while is our producing partner in Ethiopia. Sharo is located just south of the town of Yirgacheffee in the Sidamo region. His attention to detail in coffee production is showcased by coffees like this lot.
Despite sourcing from many local farming families, the quality is kept high, and the results are there for everyone to taste. There is a richness in this coffee that really stood out for us on the table, and it's why we come back to it every year - this year's harvest in particular is much more fruit forward.

All coffee sold in Ethiopia gets graded by the Ethiopian Coffee Exchange (ECX). The visual quality of the green beans – any defects or damage – is assessed, and the coffee is cupped to see how it tastes. Between these factors, a coffee is given a grade from 1 (the best) to 5 (the worst), with grades 1 and 2 being considered Speciality coffee.
