This coffee spoke to us straight away. Its story embodies legacy. Producer Ariel Pajoy has been surrounded by coffee production since he was a child. His parents were growers, and just as their wisdom was passed to him, so he passes his to his own family, who contribute to the work of producing each harvest. When Ariel first purchased Finca Buena Vista, it was a neglected junkyard, the land wasted with suffering coffee trees and trash. It’s transformation and Ariel’s labour of love – his passion – is reflected in each cup of this coffee. Ariel and his family harvest twice a year, once in May – June and again October – November. This specially prepared micro-lot is fully washed and undergoes dry fermentation for 24-32 hours. It is sun-dried on raised beds inside covered patios. It is a stunning example of the unique quality of coffee from this region of Colombia, and we are proud to be offering it in collaboration with our sourcing partners, Caravela.
