Gisanga Washed

Candied lemons, Black tea, Caramel sauce

We’re back in Rwanda this week with another lot from the Cyato washing stationg called Gisanga. This coffee is processed with the thoroughly washed processing method, using natural spring water known as “Theresa’s natural spring”, an old name from the 1980s, when the Theresa family lived in the village and used this water for washing coffee using a home processing method.

For environmental protection, they have installed a wastewater treatment system. Once the coffee cherries arrive at the washing station, they are intensively hand-sorted and floated to ensure that only good cherries are processed. The coffee is pulped on the same day of delivery in the evening, using a mechanical pulper separating coffee beans in different grades. After pulping, the coffee is fermented in open tanks for 10 to 16 hours and graded in the morning using a floatation system in a channel using clean water.
