Canario Coffee Beans
Canario is a natural mutation of Bourbon, originating in Brazil and identified by its yellow fruit at ripeness. It produces more than its Bourbon parent, with yellow-fruiting varieties generally showing higher yields than red, though it shares Bourbon's susceptibility to pest and disease and is more susceptible to wind damage given a slightly more slender plant structure. The cup sits close to Bourbon but with a noticeably brighter acidity and a pronounced sweetness that makes it particularly well-suited to espresso-based drinks. It grows best at 1,000 metres and above, where the altitude contributes to complexity and clarity. Canario remains predominantly a Brazilian variety and is relatively uncommon outside that context.
