  • This coffee is Yellow Honey processed, which is just like the Pulped Natural method. The fruit is removed from the seed of the coffee bush and left to dry. The main difference is that there is no water involved when the cherry is removed, so mucilage sticks to the bean. This can be dangerous, but it's necessary in these parts of Costa Rica where water is limited: water is a precious commodity in this area of Naranjo, so this method suits the location very well.

    The coffee ends up clustering whilst drying because there is so much mucilage. So the coffee either needs to be turned regularly to stop this happening, or it has to be broken up. Over-fermentation can happen at this stage and you can end up with a not-so-good cup, but the Aguileras are well-versed in this method and are some of the most skilled in Costa Rica.

    This well balanced coffee is like a bakewell pudding with sweet almond and raspberry, but you'll also find soft yellow plum notes and a sprinkle of walnut before it all finishes with a little splash of cream in the finish and into the aftertaste.

    Medium: once this goes through first crack, let it slow down and develop a little in the gap and finish the roast before second gets going.

    Espresso: Turkish coffee (jezve) or, you guessed it, espresso*

    Fine Filter: Moka pot, AeroPress, single cup pour-over (e.g. Hario V60 01, Chemex 1-3 cup, Kalita 155). Fine filter also works well for home espresso machines like the De'Longhi Dedica.

    Medium Filter: Double cup pour-over brewers (e.g., Clever Dripper, V60 02, Chemex 6/8/10 cup, Kalita 185, April, wide Orea, etc)

    Coarse Filter: Automatic drip brewers like Moccamaster, BUNN, Sage, Behmor etc, and syphon brewers.

    French Press: French Press (cafetiere/press pot/plunger Pot), cold brew, cowboy coffee.

    It is not possible to grind 3kg bags.

    *Please note that some home espresso machines will struggle with a standard espresso grind due to the wide variety of machines on the market and the difference in spec when compared to commercial espresso machines.     If you place an order before 07:30 am GMT, it will be dispatched that day. If you order after 07:30 am GMT, it will carry over to the following working day for processing.

    We offer free UK mainland delivery on all orders over £30.00. If you're spending under £30.00, one bag sent with First Class postage will cost £3.50, and one bag sent with Second Class postage will cost £2.00. DPD next working day delivery is available for a flat rate of £7.00 for all orders up to 10kg.

    First Class/Tracked 24 orders have a delivery aim of the next working day (Monday-Saturday) after dispatch. Second Class/Tracked 48 orders have a delivery aim of 2-3 working days (Monday-Saturday) after dispatch. DPD has a delivery aim of the next working day (Monday-Friday) after dispatch.

Finca Licho

We first bought from Finca Licho in 2007 when it was awarded fourth place in the Cup of Excellence. Situated 1,500 metres above sea level in the region of Naranjo, the farm is located in the volcanic Northern Cordiles corridor of the Western Valley, which is an area famous for the production of excellent quality coffee.
