For those who crave depth and richness in their cup, Paramount is our carefully developed answer to darker roasting. Whether you're pulling shots, brewing filter, or building milk-based drinks, this blend delivers complex flavour with satisfying body. It's bold enough to hold its own with milk, yet smooth and nuanced enough to shine however you choose to brew it.
Paramount brings together four distinct origins, each playing a specific role in creating a balanced, full-bodied profile that delivers complexity with every sip:
- 40% Brazil: Ipanema, Pulped Natural – The foundation, bringing body, sweetness, and that signature chocolate character
- 30% Guatemala: San Patricio Estate, Washed – Adding structure and depth with caramel notes
- 25% Zambia: Mount Sunzu, Washed – Contributing brightness and complexity to balance the darker tones
- 5% Brazil: Rio Brilhante, Natural – The finishing touch of dried fruit sweetness
This full-bodied blend opens with the dark sweetness of toffee and a sprinkle of cacao nibs, before transitioning into a rich, lingering dark chocolate finish. It's bold enough to shine through milk, yet smooth enough to enjoy as straight espresso for those who prefer intensity without bitterness.

Dark: Paramount represents our thoughtful approach to darker roasting – this isn't about simply roasting longer or hotter. We carefully extend the development time, allowing the sugars to caramelize slowly and evenly while building body and sweetness. By bringing the coffee to the cusp of second crack rather than pushing deep into it, we develop those rich chocolate and gently roasted flavours while preserving the distinct characteristics of each origin.
This extended, controlled development is what separates specialty dark roasting from traditional dark roasts. You get the depth, body, and comforting familiarity of a darker profile, but without sacrificing the complexity and quality that makes these coffees special in the first place. The Brazilian sweetness shines through, the Guatemalan structure holds firm, and the Zambian brightness keeps everything balanced – they don't get lost in the roast.
The result? A darker roast that still tastes like great coffee, not just like roast.

(This is our go-to starting point, but every setup is different – dial it in to suit your taste and equipment)Resting Recommendation
We recommend resting Paramount for at least 7 days after roasting before pulling shots. This allows the coffee to degas and the flavours to settle, giving you the best possible extraction. That said, some people enjoy it fresher – feel free to experiment and find your sweet spot! -
