This coffee undergoes a meticulous process at the Kirundo Mill and Cafex washing station in North East Burundi. Ripe cherries are handpicked by dedicated farmers and delivered to the washing station daily. The cherries are carefully selected, ensuring only the finest ones make the cut. They are then sun-dried on raised African beds, with frequent turning for even fermentation. The cherries are covered during the intense midday heat to prevent sun damage. Once the optimal moisture levels are achieved, the coffee is transported to Ikawa Nziza's dry mill in the Gashoho commune for milling. The mill's location in a high-altitude and low-humidity environment preserves the coffee's quality, allowing farmers to command higher prices for their exceptional produce. This meticulous process guarantees a remarkable coffee lot that embodies the flavours and characteristics of the region, providing a truly exceptional coffee experience.
