Fudge, Apricot, Banana
The Bonilla family who own Don Mayo micromill were one of the first families to innovate by processing their own coffee rather than delivering to a Cooperative, with Hector Bonilla founding the mill back in 1994. Even now though, they continue to push their farms onward to new things. Hector's son Pablo now runs most of the day to day, with his own son watching on. Despite this, Hector is still actively involved - the family have just taken on a large new farm called San Francisco and we watched Hector busily working away their with his machete. Asked why he wasn't taking some time to relax now he has grandchildren, he explained the work he does is for their future.
