This week we are visiting Thailand!

In the past, the coffee from Huai Mae Liam village was sent to bigger villages like Doi Chang and Doi Pangkhon and had been marketed under the names of those famous villages.

This coffee is from a specific farm owned by Asor Merlaeku, one of the most sophisticated farmers we have encountered. Asor is at the forefront of coffee production in Huai Mae Liam, constantly pushing the quality forward with new techniques and fermentations. The coffee beans are partially fermented, meaning that they intentionally took the coffee out of the fermentation tank before the fermentation was finished. This left some mucilage on the parchment, resulting in a brightness close to washed coffee, but smoothness and sweet like honey process.

All these steps show the meticulous care and focus that has gone into producing a unique coffee that we’re excited to showcase.
