Rubi Coffee Beans


Rubi is a Brazilian hybrid of Mundo Novo and Catuai, developed to combine Mundo Novo's vigour and yield with Catuai's compact, manageable plant structure. It grows at between 800 and 1,300 metres, performs well in Brazil's Minas Gerais and São Paulo regions, and is suited to mechanical harvesting — which makes it a practical choice for the scale at which most Brazilian farms operate.

In the cup, Rubi delivers the sweet, rounded profile characteristic of Brazilian naturals: caramel and brown sugar sweetness, nutty and chocolatey undertones, low to medium acidity, and a full body that holds up well in espresso and milk-based drinks. It is not a complex variety by specialty standards, but it is a consistent and dependable one, and natural or honey processing can bring out additional fruit character when producers invest in it.
