Our Relationship with Gabriel de Carvalho Dias of Fazenda Cachoeira da Grama

At Ozone Coffee, we believe that the best coffee is built on strong, long-standing relationships. One of our most treasured partnerships is with Gabriel de Carvalho Dias, a fourth-generation coffee farmer and agronomist, who manages Fazenda Cachoeira da Grama in Brazil’s renowned Vale da Grama region.

Over 20 Years of Collaboration

Our relationship with Gabriel and his family’s farm began in 2003, and we’re proud to have worked together for over two decades. Fazenda Cachoeira da Grama has been in the Carvalho Dias family since 1890, and while we haven’t been sourcing coffee from them for quite that long, the connection we’ve built is one of mutual respect, shared values, and a deep commitment to quality.

In 2016, Bourbon Specialty Coffees joined the family in managing the farm, which now serves as their main processing centre and research hub for coffee variety development, harvesting techniques, and post-harvest innovation.

From Hasbean to Ozone: A Legacy of Connection

This relationship was originally established through Stephen Leighton, founder of Hasbean, who was one of the earliest champions of Brazilian specialty coffee. Stephen built a close, long-term partnership with Gabriel, regularly featuring coffees from Fazenda Cachoeira da Grama in Hasbean’s offerings and his influential In My Mug series.

In 2018, Hasbean became part of the Ozone Coffee family, and with that, the relationship with Gabriel and Fazenda Cachoeira da Grama continued to flourish under our stewardship. We’re proud to carry forward this legacy—honouring the trust, transparency, and shared values that Stephen and Gabriel cultivated over many years.

Today, we continue to work closely with Gabriel and his team, sourcing exceptional coffees that reflect both the farm’s rich history and its forward-thinking approach to sustainability and quality.

A Farm Rooted in History and Innovation

Located in the Sul de Minas mesoregion, just north of the Minas Gerais border and bordering Alta Mogiana in São Paulo, Fazenda Cachoeira da Grama is situated at 1,100 to 1,300 metres above sea level. The mountainous terrain and volcanic soil create ideal conditions for growing high-quality coffee, while the steep slopes mean that all farm work is done by hand.

The farm primarily cultivates Yellow and Red Bourbon varieties, using Natural and Pulped Natural processing methods. Every coffee cherry is handpicked at peak ripeness, then meticulously processed through a series of steps including air cleaning, washing, pulping, drying, milling, and grading. Innovative drying techniques, such as hanging beds, are used to enhance flavour development and consistency.

Who Is Gabriel de Carvalho Dias?

Gabriel is not only a coffee farmer but also a trained agronomic engineer with over 30 years of experience in the field. His deep understanding of soil science, plant health, and sustainable farming practices has helped elevate Fazenda Cachoeira da Grama to international recognition.

Under his leadership, the farm has earned multiple accolades, including Cup of Excellence awards and top placements in national and regional coffee competitions. Gabriel’s approach blends scientific rigour with a heartfelt passion for coffee, making him a respected figure in Brazil’s specialty coffee community.

A Commitment to Sustainability and Community

Environmental stewardship is a core value at Fazenda Cachoeira da Grama. The farm integrates native tree planting alongside coffee crops to promote biodiversity and ecological balance. It also supports the local community with infrastructure including a school, football pitch, club, and 47 homes equipped with modern amenities for farm workers and their families.

This holistic approach to sustainability—social, environmental, and economic—is one of the many reasons we’re proud to work with Gabriel and his team.
