  • Fazenda Cachoeira da Grama, owned by the Carvalho Dias family since 1890, is a renowned coffee farm located in the Sul de Minas mesoregion of Brazil. For over 20 years, we've been very proudly buying coffee from this farm. Since Bourbon Specialty Coffees joined the management in 2016, it has become a hub for coffee variety research and innovative processing techniques. The farm is nestled just north of the Minas Gerais border and borders Alta Mogiana in São Paulo. Its mountainous terrain, which ranges from 1,100 to 1,300 meters above sea level, provides ideal conditions for growing high-quality coffee. The unique topography and volcanic soil, combined with cooler temperatures, contribute to the distinctive flavour profile of their coffee.

    The Vale da Grama region, a historic coffee production area, has long been at the forefront of specialty coffee innovations. Fazenda Cachoeira da Grama primarily grows Yellow and Red Bourbon varieties, using both Natural and Pulped Natural processing methods. The dedication to quality at Cachoeira has earned the farm multiple Cup of Excellence awards. Gabriel de Carvalho Dias, an agronomic engineer and leading agronomist, has played a key role in the farm's success through his expertise and passion for coffee.

    Spanning 417 hectares, with 64 hectares dedicated to coffee, Fazenda Cachoeira da Grama places a strong emphasis on environmental sustainability. Native species are planted alongside coffee crops to support biodiversity. The farm also provides modern amenities for its workers, including a school, club, football field, and 47 houses. Investments in coffee processing facilities, wastewater treatment, and a small hydroelectric plant further demonstrate their commitment to sustainability. The Carvalho Dias family's dedication to land preservation and community support has enabled them to produce consistently excellent coffee, making Fazenda Cachoeira da Grama a standout in the global coffee community.

    Roasted hazelnuts dipped in sticky toffee fill the cup, before shifting into dark chocolate on the finish and walnut on the aftertaste for a sweet, nutty, easy drinking coffee.

    Roasting Information
    Medium to medium-dark: keep the pace of the roast middle of the road, maybe a fraction on the slower side. Then you're looking for end of the gap to finish the roast, don't push it too far.

  • We offer our coffees as whole beans, pre-ground, and green unroasted.

    Espresso: Turkish coffee (jezve) or, you guessed it, espresso*

    Fine Filter: Moka pot, AeroPress, single cup pour-over (e.g. Hario V60 01, Chemex 1-3 cup, Kalita 155). Fine filter also works well for home espresso machines like the De'Longhi Dedica.

    Medium Filter: Double cup pour-over brewers (e.g., Clever Dripper, V60 02, Chemex 6/8/10 cup, Kalita 185, April, wide Orea, etc)

    Coarse Filter: Automatic drip brewers like Moccamaster, BUNN, Sage, Behmor etc, and syphon brewers.

    French Press: French Press (cafetiere/press pot/plunger Pot), cold brew, cowboy coffee.

    It is not possible to grind 3kg bags.

    *Please note that some home espresso machines will struggle with a standard espresso grind due to the wide variety of machines on the market and the difference in spec when compared to commercial espresso machines.   • We roast coffee and dispatch orders Monday to Friday.

    Order before 07:30 am for same day dispatch. If you order after 07:30 am, your order will carry over to the following working day for processing.

    We offer free UK mainland delivery on all orders over £30.00. If you're spending under £30.00, one bag sent with First Class postage will cost £3.25, and one bag sent with Second Class postage will cost £2.50. DPD next working day delivery is available for a flat rate of £8.00 for all orders up to 10kg.
