Cooked Rhubarb, Red laces, Prunes

We’re in East Africa again with an exciting lot from Rwanda. The Cyato washing station in the Nyamasheke district is where this lot was produced using the traditional washed processing method. The washed method focuses on removing the fruit skin layer from the coffee cherry and then fermenting the remaining coffee beans in water to remove any further sticky mucilage. The end result is a clean, sweet cup that leaves wanting more.
