We’re back in Costa Rica this week. Featuring a fantastic lot from the Aguilera Brothers’ farm Finca Licho. We’re fortunate to have sourced some amazing coffees, and this one is a shining example of that. The variety Pacamara is notoriously difficult one to roast, but definitely worth pursuing as they can provide some incredible cups. This one is particularly complex, and showcases the work the Aguilera brothers have been doing on the farm. Together with their brothers and sisters, they take a handle on all aspects of production, through to milling and even pruning trees. This deep understanding of each stage is showcased in a very clean, very well executed coffee.
