Washed coffees are all about clarity. Clean, bright, and expressive of origin in a way that few other processing methods can match. If you love a cup where the terroir of the farm and the character of the variety really shine through, this pack is for you.
The washed process – also known as the wet process – involves removing the coffee cherry's outer layers before drying. After harvesting, the cherries are pulped to strip away the skin and most of the fruit. The beans then go into fermentation tanks, where the remaining mucilage breaks down naturally before being thoroughly washed away with clean water. After that, they're dried – typically on raised beds or patios – until they reach the ideal moisture level for roasting.
Because little to no fruit remains on the bean during drying, washed coffees tend to have a lighter body and higher perceived acidity than natural or honey processed lots. The result is a cleaner, more transparent cup – one where floral notes, bright citrus acidity, and delicate sweetness can come forward without the weight of fruit fermentation.

Syrupy body and brown sugar sweetness combine with a sprinkle of sultanas, raisins and candied citrus peel to remind you of a mince pie. A easy drinking mix of brown sugar and dark chocolate in this cup is finished with a soft plum and biscuit sweetness into the aftertaste. -
