The Ethiosar varietal was developed and popularised on this Nicaraguan farm. Its a Catimor - an Arabica varietal with a small amount of Rubusta in its ancestry - which has retained the vigorousness and disease resistance of that species but which produces great quality coffees typical of its Arabica antecedents.
